These last weeks of summer are relentlessly miserable – baking hot and dry as a desert. We think this refreshing, classic cocktail is perfect for easing the transition into cooler days and nights. Pimm’s is an English gin-based herbal liqueur that matches perfectly with fresh fruit and sodas of various kinds. Try our version, which is the American style of the Pimm’s Cup, or replace the ginger ale with sparkling lemonade for the English version. You may also add things such as strawberries or mint leaves if you wish.
- – 2 oz Pimm’s
- – Ginger Beer or Ginger Ale
- – 1 lemon wedge
- – 2 cucumber wheels
Squeeze lemon and add with cucumber wheels to the bottom of a highball glass and fill with ice. Add Pimm’s, top with ginger ale, and stir.
